The golden enoki, a variant of the regular enoki, has a delicate, mild flavor and a crunchy texture. This mushroom grows in clusters on tree trunks and is cultivated under controlled conditions. Unlike the regular enoki, which has white caps and stems, the golden enoki has a beautiful golden yellow color. They are often used in hotpot and ramen because of their unique texture and the fact that they retain their crunch during cooking.
