Purple Knight's Fungi (also known as Blue Foot Fungi) are small to medium in size and have a flattened, rounded cap with a thick, cylindrical stipe. The hat is smooth, firm and cream colored with closely packed purple wavy gills on the underside. The stem is dense, thick and colored on the surface with deep lilac hues, but as the mushroom ages, the purple color will fade. When cooked they are very fragrant, velvety and silky in consistency and have an earthy, woody flavour.

PREPARATION

Purple agaric mushrooms must be cooked before consumption and are best suited for uses such as roasting, grilling, braising, stewing and sautéing. When cooked, the knight agarics do not retain their lilac color, but they retain their shape well, allowing them to be used as a meat substitute. They can be used in recipes that call for button mushrooms, quartered and grilled to enhance their earthy flavor, sliced and mixed into an omelet, or sliced and mixed into barley soup. They can also be sautéed and used in a light sauce for meat, poultry or seafood or cooked in heavy cream and poured over Italian or French bread. Wood black mushrooms pair well with lamb, veal chops, crab, prosciutto, dried ham, eggs, sherry, dry marsala, heavy cream, onions, garlic, lemon juice, parsley, arugula, and risotto. They will keep for 3-5 days if kept uncovered in paper towels on a plate or in a ventilated container in the refrigerator.

Purple Knight's Mushrooms contain high amounts of thiamine, or vitamin B1, which helps support nervous system functions and blood sugar metabolism. The lilac-filled mushrooms also contain high amounts of polysaccharides, more commonly known as carbohydrates.
