Ingredients for King Oyster Mushroom Cioppino:


    1 bag of enoki mushrooms 3 slices of bacon 6 bamboo (short, skewers) 1 handful of toasted sesame seeds (for the topping, optional)


PREPARATION

STEP ONE: Prepare the mushrooms.

Brush the loose skirts off the ends of the enoki mushrooms with a paper towel, trim the ends and set them aside. Cut the bacon slices in halves. Pick a small bunch of enoki mushrooms and wrap with half of the bacon slices, secure by inserting a bamboo stick in the center.

STEP TWO: Cook the mushrooms. Place the bacon enoki wraps in a small cast iron pan, carefully pull out the bamboo sticks. Place the pan over medium heat and cook the wraps until all sides of the bacon are crispy and browned (I used a small pair of tongs to pick up the wraps and turned them over).

STEP THREE: Transfer the bacon enoki wraps to a plate, sprinkle with toasted sesame seeds to serve.
