Ingredients for King Oyster Mushroom Cioppino:


    4 strips of bacon 1 tsp. unsalted butter 2 pounds chanterelles 1 clove garlic, finely chopped
    2 tsp. coarsely chopped parsley 1 tsp. lemon juiceKosher salt and freshly ground black pepper, to taste

PREPARATION

Prepare and cook the mushrooms. Heat a 12″ frying pan over medium heat. Add bacon and cook until crisp, 10-12 minutes. Place the bacon on kitchen paper with a slotted spoon and let it drain; set aside. add butter; cook until milky froth settles in bottom of pan and turns nut brown, 12-15 minutes. Increase heat to medium and add mushrooms and garlic; cook until golden brown, 8-10 minutes. Sprinkle with parsley, lemon juice, salt and pepper. Garnish with the remaining bacon.
