Pink Flamingo oyster mushrooms are small to medium sized with a cap averaging 2-5 inches in diameter and attached to short or nonexistent peduncles, growing in tiered clusters. The thin caps are smooth, finely lined, and are intensely pink when raw, turning to orange-brown when cooked. The brims of the hat also start out flat and curl with age, almost into a tubular shape. Under the cap are many soft, short, deep pink gills that open downwards into a very short peduncle. Pink Flamingo oyster mushrooms are fleshy and chewy in texture, despite their thin flesh, and have a pungent, seafood-like aroma. Raw, these mushrooms have a sour taste, but after cooking they develop a mild, woody flavor that easily adapts to the flavor of the accompanying ingredients.

PREPARATION

Pink Flamingo oyster mushrooms are best suited for cooked applications such as sautéing, boiling, roasting or frying. They can be sautéed or stir-fried with other vegetables, added to pasta dishes, sprinkled over pizza, added to cereal bowls, sautéed with eggs, cooked in soups, chowders, or stews, or cooked in risotto. They can also be baked and mixed with white cream sauces for added flavor. Because of their fleshy texture, these mushrooms need to be cooked thoroughly, about twenty minutes, to develop their flavor and edible consistency. It is also important to remember that the pink color will fade when cooked. Flamingo oyster mushrooms go well with coriander, parsley, mint, basil, garlic, ginger, onion, sesame oil, soy sauce, bell pepper, red cabbage, broccolini, baby corn, leeks, quinoa, noodles, rice and potatoes. They have a very short shelf life, sometimes only 12 hours after harvest, and should be consumed immediately after purchase.

Pink Flamingo oyster mushrooms contain fiber, potassium, copper, riboflavin, vitamin B6, folate and ergothionein, an antioxidant that can reduce the occurrence of cardiovascular disease by helping to prevent the formation of plaque in the arteries.
